This is the science behind the perfect chip. That's with the type of potato you use. We always opt for a gruyere. We're gonna cook them into uniform fries before soaking in cold water. This removes any excess starch as well as drawing out water soluble sugars. Rinse until the water runs clear. We add baking soda to boiling water before dropping in our fries and cooking until just tender. The boiling process allows the chip to absorb water while the bicarb helps fluff up the exterior. Before frying, we're gonna freeze until completely cool. We use a mixture of neutral oil and duck fat for flavor. Heat it to one forty or 284 degrees Fahrenheit. During the first fry, the water content inside the potato turns to tier, causing the starch molecules to swell and separate. Those gaps giving the perfect fluffy interior. Remove, drain, and head back to the freezer to set the internal structure. For the final fry, our oil is gonna go up to one ninety, which triggers the Maillard reaction, where the sugars left on the surface of the potato react with amino acids to give you a gorgeous golden crust. Season with Maldon salt and dig in.
