One of the most important skills in any professional kitchen is mastering the emulsion. But what is an emulsion? Essentially, it is a combined mixture of two or more ingredients that don't usually mix, in most cases, fat and water. If you think about classic vinaigrette with vinegar and olive oil, as vinegar is mostly water, naturally, they repel each other. While you could whisk it vigorously, tier would always find a way to separate. However, with the addition of emulsifying agent, otherwise known as a surfactant, these opposing substances can come together in a stable emulsion. In a surfactant, one side is attracted to water and the other side is attracted to fat, basically forming bridges between the fat and water molecules and enabling them to coexist harmoniously. Common surfactants include mustard, egg yolks, or honey. In a standard mayonnaise, both the egg yolks and the mustard work together to bridge this molecular gap between the water content in the lemon juice and the fat in the oil. Once you've got successful emulsion, it's always going to be thicker than either of the substances alone, making it tier perfect hat for dressing dips and sauces.
