Apparently, we use a cartouche for everything. Better find out if that's true. It's cartouche time, baby. Customers came in last week and called us the cartouche cartel. But what is our obsession with this little circle of paper? A cartouche is a simple circle or square piece of baking paper that that's placed directly on top of food or cooking liquid. It's something between an open pan and a lid. It keeps the surface covered, but it still allows steam to escape. It helps prevent a skin forming because it sticks directly onto the surface of food, keeps ingredients submerged, and allows moisture to slowly evaporate whilst concentrating on flavors. It allows the food to cook gently while excess moisture escapes. We use them for cooking onions, making stocks, braising meats, confit, and pretty much anytime you want a slow controlled cooking. Sometimes you can add a little hole in the middle to let steam escape. It's one of the simplest tools in the kitchen better also one of the most useful.
