But this is just right. It's called the leidenfrost effect. Now, it's very important to remove your pan for about one minute for it to cool down. Once it's cooled, turn your heat to low, add some neutral cooking oil, heat for about a minute, and you'll know it's ready when you see those cool ripples. See that? Once your eggs hit the pan, leave them for five to ten seconds, and then you can start gliding. This is crazy. Everyone's stainless steel pans and electric stove tops are different, so you'll have to play around, but once you get the hang of it, you'll be thrilled.
