I love when restaurants make things in bulk and serve it all night long, especially if it's a dessert, and that dessert is chocolate mousse. A lot of different restaurants do this, but the French do it perfectly. It's both decadent and rich while also being super light and and fluffy, and it's very easy to make since it's simply just melting down chocolate, then folding in heavy cream, sugar, and egg whites. You can then either serve this immediately or set it in the fridge for four to five hours or overnight, and just be prepared for the absurd amount of chocolate mousse that will be in your fridge because this recipe serves 10 to 12 people, which makes this work so well for a party or for a holiday. Once your mousse is ready to serve, you can top it with any of your favorite things. I like a side of whipped cream, a little flaky salt, and some homemade cherry compote. I'd guess that this could last up to a week in your fridge, but once you taste this, I think it's gonna go much faster than you think.
