We want basically good pan, cold butter, cold eggs, and then slowly bringing this up to temperature. And finally, that brings me to stirring. You're not stirring your eggs enough. Hold, please. Your spatula should be moving constantly. Whatever shape you want to do. You could do figure eights. You could do circles. You could do zigzags. You could pull in from the edges.
