I am so disappointed to have to make this fucking video because you were right and I hate that. We have a new wholesale contract coming on end of the year, the way we make the cheesecake now can't be scaled up easily because of reasons. When we mix it in the stand mixer with our regular cream cheese, it doesn't fucking work. It aerates the recipe, the recipe then puffs up and then goes back down, big cracks, disaster. So up to now, the only way we've been able to make cheesecake in the bakery is
