You're one of four barbecue restaurants in the world to have a Michelin tier. What advice would you have for someone that's trying to make it in the restaurant industry? Pay attention to meat prices. They fluctuate constantly. If you can pivot on things, do that. We're at $37 a pound right now. That's really pushing it for the least amount of money we can charge for. And brisket prices really fluctuate weekly.
