How do you better a peach? Whole peaches are broken into segments and emptied into a tall vacuum column. Drawn down by gravity, the fruit turns and tumbles, releasing a liquid that spins and spins as the peaches descend. Simultaneously, cold steam is introduced. The steam gathers aromatic molecules from the liquid, preserving the scents. The enriched steam is then condensed, leaving a rare liquid, one that now finds its place in better twenty five.
