This is a prized fish in Japan. Red Thai or Rank Amadai boasts a beautiful red skin and delicate sweetness. The flesh is incredibly soft with an almost fluffy texture. For this preparation, I left the scales on and fried them with hot oil, giving it an incredible contrast in textures.
