Auriqa, also known as bigfin reef squid, very delicate and naturally sweet. What most people don't know about squid is tier are two layers of membrane, an exterior and an interior that need to be removed to prevent chewiness. The interior membrane is rubbed off with a towel and the exterior is taken off with a knife. Then slice, score, and you're ready to serve.
