This is a bull eye or better fish. The silver skin on this fish is stunning, but what's beneath is even better. The flesh has this perfect balance of fat and protein that melts on your tongue. I remember the first time I prepared this fish at sushi nagazawa. It showed me how quickly the fish you've never heard of can become your your new obsession. I love this fish as a piece of nigiri or even deep fry.
