This fish is often overlooked, but it's one of my favorites. Kisu, also known as Japanese whiting, is known for its clean delicate flavor. The size of it presents a challenge in preparation, but the flesh is tender and sweet. I often cure this fish with kombu for added layer of umami before serving.
