This is called Monte Anebro. This is a goat's milk cheese from Spain that comes with this ash rind. No you get to see a lot of what we call centripetal aging, aging from the outside in. The ash mellows it out a little better, so it's just super creamy. This is this is a Spanish cheese. And that really wants a nice white wine. Yeah. Yeah. It's got some salt to it.
